Ingredients

2 ounces fresh sorrel leaves

2 large garlic cloves, peeled, minced

19-ounce can of chickpeas, rinsed and drained

Zest and juice of 1 lemon

1/2 cup tahini

1/4 cup extra-virgin olive oil

1/4 cup water

1/2 teaspoon salt

A pinch of chili powder

1 pound of your favourite fresh baby vegetables for dipping, green beans, yellow beans, peas,

carrots, turnips, radishes, cucumbers

Sourdough Crackers

1 cup whole wheat flour

1 cup sourdough starter discard (alternatively, mix 1 cup of whole wheat flour and 1 cup of

water, use 1 cup of mixture)

1/4 cup olive oil

2 teaspoons kosher salt

Sumac Chili Oil

1 cup vegetable oil

1/4 cup chili flakes

1/4 cup sumac powder

Procedure

Make the Crackers

Preheat oven to 350°. Turn on convection fan if you have one. Line 2 large baking sheets with parchment paper or a non-stick silicone liner. In a mixing bowl stir together the sourdough starter discard, whole wheat flour and oil. Knead into a ball of smooth dough. Divide into two pieces. On a lightly floured work surface roll each out as thinly as possible. Transfer to baking sheets.Evenly sprinkle with kosher salt. Bake until golden brown and crispy, 20 minutes or so. Cool then break into large pieces before serving. Store in an air-tight container for 2 to 3 days. Make the Sumac Chili Oil Combine the oil and chili flakes in a small saucepan over medium heat. Bring to 350°. Rest until cool, 4 hours or so. Whisk in the sumac. Transfer to a standard mason jar or storage container. Cover tightly and rest overnight.

Make the Hummus

Blend everything smooth in your food processor. Fill a festive bowl or spoon onto a clever platter. Arrange with an array of fresh vegetables and crackers. Drizzle with sumac chili oil.
