This fun snack is a tasty way to add some healthy flavour to a lunchbox or your table. It’s one of our family favourites partly because it’s so easy to make.
Yield: 1 or 2 servings
1 whole wheat tortilla
2 tablespoons chunky peanut butter
1 ripe bananna
Spread an even layer of peanut butter on the tortilla. Lay the banana towards the bottom, straightening it slightly to remove its curve. Tightly roll the tortilla around the banana.
Slice into rounds and serve.
You may use any peanut butter you like. Nut butters like cashew and almond also work very well. For a classic flavour treat add a thin layer of your favourite jelly.

Fresh cultured blue mussels are easy to cook as well as being a healthy and easy meal option. They’re quick and tasty and can be eaten right out of the pot or used in a variety of recipes. Before you start cooking, you should always give your mussels a quick rinse. Cultured blue mussels are pre-cleaned so that’s really all you need to do. The fresh water will cause the mussels to close. If there are any that don’t close give them a quick tap, if they still don’t close at least partially, simply discard them.
