Food Country

Food Country is a weekly web series featuring Chef Michael Smith and the flavours, people and stories of Prince Edward Island.

One week Food Country follows Michael as he explores the island, searching for fresh ingredients. The next week Food Country visits Michael’s home kitchen as he cooks and creates simple healthy food.

Episode 2 > Garlic Steamed Broccoli

This is my favourite way to serve broccoli, it’s super speedy and it tastes great. As it steams the broccoli is scented with garlic – but not overwhelmed by it. It’s a great way to turn a head of broccoli into an aromatic side dish on the table in under ten minutes!

Serves four

  • One head of broccoli
  • A splash of olive oil
  • A clove or two of thinly sliced garlic
  • A splash of water
  • A sprinkle or two of salt and pepper

Cut the broccoli into small florets. Trim the stalk bottom and discard, cut the remaining stalk into thin slices. Splash enough water into the bottom of a small saucepot to cover the bottom about 1/4 inch deep. Add the sliced broccoli stems, oil, garlic and salt then begin heating over a medium high heat. In a few moments the water will start to simmer, the garlic will loose much of its pungency and perfume the steam. Add the broccoli florets and cover the pot with a tight fitting lid.

Steam until the broccoli is tender and bright green, no more than five minutes. The water should finish evaporating just as the broccoli finishes cooking. Remove the pan from the heat and give it a good shake tossing the broccoli with the oil and garlic. Serve immediately.

    I LOVE broccoli, but to me, it should be served quickly steamed, nothing on it, just the pure taste of broccoli :) But the stems, I dice and toss in soups or julienne for a stir fry. Truly my favourite vegetable!

    Hi Mary, I don’t know what you missed on the sprouts so I’ll tell you how I do them.
    You need a wide mouth jar.
    A piece of cheesecloth
    A elastic band.
    Any type of seed… Mung beans for the big sprouts.
    A big jar will make a lot of beans, start with 1/4 cup of beans. Soak beans for 8-10 hrs. Rinse and drain then put in a dark warm place. If you start to soak them in the morning then the first rinse will be at nite. Do the same thing in the morning and again at noon then at nite.After 4-5 days you should have a big gob of sprouts. Put in plastic bag in fridge, should last 4-5 days

My boyfriend took me there for the first time last summer (he’s a native Islander) and absolutely fell in love with the rolling hills, beaches and water.
